Do's
- Do use freshly drawn water - repeated boiling reduces the oxygen content and makes the water harder, giving the brew a chalky film.
- For the perfect temperature, let the kettle come to the boil and click off. Then give it a few seconds before pouring.
- Always brew for between three and five minutes. This helps optimise the balance of flavour and the strength of the drink.
- Add five per cent of milk to the cup before adding the tea.
- Be patient! Wait for six minutes for the temperature to drop to 60C before drinking! It enhances the flavour and you don't burn your mouth!
The Don't s are very simple....
- Don't use disposable cups! The smooth surface of a china cup or mug not only keeps the natural tannins in the tea from sticking to the side, but the sound of a teaspoon clinking against it is apparently very comforting! Plus, environment people?!
