A nice cup of Rosy Lee

Although Britain drinks 165 million cups of tea a year, there is little agreement on how it should be served. In a bid to settle the centuries old argument, scientists at University College London have now got together to formulate a step-by-step guide for the perfect cup of tea and Millimopps has brought it here for you today! Apparently water temperature, timing and even the cup type are all crucial. (We knew our Emma Bridgewater mug obsession WAS necessary after all!). 

Do's

  • Do use freshly drawn water - repeated boiling reduces the oxygen content and makes the water harder, giving the brew a chalky film.
  • For the perfect temperature, let the kettle come to the boil and click off. Then give it a few seconds before pouring.
  • Always brew for between three and five minutes. This helps optimise the balance of flavour and the strength of the drink.
  • Add five per cent of milk to the cup before adding the tea.
  • Be patient! Wait for six minutes for the temperature to drop to 60C before drinking! It enhances the flavour and you don't burn your mouth!

The Don't s are very simple....

  • Don't use disposable cups! The smooth surface of a china cup or mug not only keeps the natural tannins in the tea from sticking to the side, but the sound of a teaspoon clinking against it is apparently very comforting! Plus, environment people?!
